Sand Bird is a giant bird created from sand in Super Mario Sunshine.
The Sand Bird is Born
In Gelato Beach, you can access the level "The Sand Bird is Born" to encounter the creature. The objective is to collect 8 Red Coins, 7 of which are scattered above the Sand Bird's massive body. The 8th Coin rests on a pillar high above in the sky. The Sand Bird's only appearance was the Super Mario Sunshine level; it hatched from a giant egg in a Stone Tower in Gelato Beach. The Sand Bird will move on its side to challenge Mario to stay on top. There are also 1-ups, Blue Coins, and regular Coins in the level.
