When hosting a dinner aboard the Trill starship Steadfast in the year 2372, Trill Trade Commissioner Etom Prit asked what gumbo was after hearing it mentioned. Jadzia Dax said that inquiry was the second-worst question that one could ask Benjamin Sisko, with the first being "what is baseball?". When Jadzia returned to the space station after Prit's death, Benjamin offered to prepare some gumbo for her, but weary, she declined. (DS9 novel: Revenant)
In 2378, Jake Sisko cooked gumbo for the crew of USS Theseus, though confessing to T'Lir the slow cooking time was mainly a way to take his mind off everything. (ST - Godshock comic: "Part 3")
D'Vana Tendi and Samantha Wildman ordered gumbo when at Sisko's Creole Kitchen in 2381 where they were joined by Beckett Mariner and Brad Boimler. (LD episode: "Grounded")
