Macaroons are a popular cookie-shaped confection made with coconut. Pema enjoyed making these treats and provided her own signature recipe to Avatar Korra for her book, An Avatar's Chronicle.[1]
History
Pema prepared a bag of food that included macaroons for her children as they prepared to set out to find a missing Avatar Korra. Though Jinora and Ikki were thankful for the food, Meelo was disgruntled at his mother's actions and later discarded the bag of food in a river.
After Ikki was captured by Earth Empire soldiers during her and her siblings' search, she was offered a plate of macaroons by the guards as a gesture of goodwill. Recognizing the treats as those made by her mother, Ikki asked suspiciously where they had come from, with one soldier replying enthusiastically that they had come from a large sack of food he found by the river. Though upset at the theft of their food, Ikki balked at the thought of seeing her siblings again and asked one of the soldiers to throw her a macaroon, which he promptly did.[2]
After Korra decided to chronicle her and her friends' adventures, Pema provided her with her signature macaroon recipe to be included in the journal.[1]
Pema's coconut macaroon recipe
Ingredients
- 6 cups unsweetened coconut flakes
- 1 tablespoon melted coconut oil
- 2 tablespoons maple syrup
- 1/2 tablespoon vanilla
Directions
- Preheat oven to 325° Fahrenheit.
- Mix together the coconut flakes, coconut oil, maple syrup, and vanilla in a large bowl that is as unbreakable and coconut resistant as possible.
- Form the mixture into 1-inch mounds and bake for 25–30 minutes at 325° Fahrenheit until the tops are golden, or longer if you hear a crash coming from another room and need to go investigate.
- Most importantly — keep Meelo out of the kitchen for all this.[1]
